Exam cookies

When I was in sixth grade, or maybe it was seventh grade, we had a day off and had to do a day job. This meant that something would be done to earn at least a hundred kronor, and this money would go to an organization that was voted on by everyone in the school. Many took time off during the day, and received a hundred notes from their parents. Scandalous. You actually have to work for the money, or at least try, which was exactly what me and a friend did. We decided to bake chocolate chip cookies to sell to my neighbors. I no longer remember how much they were sold for or which recipe we used, but it could very well be the original recipe for what I will share here. The cakes we went and sold were really good, but it was not easy to sell them. Partly because I thought it was scary to knock on doors and just wanted to go to those I knew, and partly because I did not know so many neighbors. Some were sold anyway, perhaps enough to compensate for the mother's purchase of ingredients. Then we probably only got one hundred each to submit anyway.

Then no more chocolate chip cookies were baked until I started studying at the F-section in 2017. We would hang out with the sponsor group, and I thought it would be fun to bring something homemade to offer, but what would it be? It would have to be vegan, and then there was someone who had diabetes, so I did not want it to be just sugar in the pastry. Then of course a diabetic has to decide for himself what he can and cannot eat, but I wanted to try to be caring so then I found recipes for chocolate chip cookies, which contained a fairly large amount of oats. I thought it was great! But it was not vegan .. So I continued with my research to find alternatives to how to make instead of being able to modify the recipe.

The original recipe I found on alltommat.se, it seems to have been removed from the website.

After doing my research, I had a new, better recipe, which was also vegan. I tested it and the cakes were incredibly good, and chewy, and delicious. Everyone loved them! And talked about them at school the next day. One led to the other, and a person who was not part of the sponsor group also wanted to taste them. So would I bake them again?

The answer came in the first week of reading, when I wanted to do everything but study. It was time to bake the cakes again, the night before the exam. The recipe was slightly improved from the first time, 300g of chocolate is a little difficult to get into the dough if it is to stick together as well. So the cakes were ready and I went to bed for the evening. The next day I took them to the exam room and invited everyone I knew and could see, before it was 8.00. Some were skeptical of the cookies, I got comments like Have you put laxatives in them?, Others were more appreciative, which I thought was fun. It was also fun with those who did not trust me. They still took one cake each, so they must have trusted me a little. They also learned that I do not bake with laxatives.

After this event, I thought it would be fun to bake them for the next exam as well - and so the tradition was born that I baked them for one exam per exam period. The classmates started looking forward to the exams, they asked if I would bake this exam period as well, they were appreciated. They were good. The people were happy. From the beginning, even the pandemic, chocolate chip cookies were baked in my kitchen. They became known as exam cakes, which I still call them. When the pandemic struck, I stopped baking them for exams, but because I missed them so much, I baked them once for my birthday. THOUGH! not without inviting, these were invited to relatives and employees at the summer job. There they were also very much appreciated, especially by the only person who was vegan. She said that she is never able to eat the coffee that is offered because it is not usually vegan. So think about it next time you plan to bid on cookies!

After this, it again took a while before the cakes were baked again, it was in February 2022. This time it was invited to the department I work for and again it was much appreciated. However, they were not vegan this time, for older people and those from other countries are not usually vegans.
To bake these divine cakes, you need skills, or not. But they get better then. A bowl, some oven plates, an oven, knife, cutting board, measuring kit and maybe a bowl are all you need. And a fridge if you live in a warm home.

First you want to turn on the oven, this is what is usually forgotten. You want top and bottom heat, and the temperature should be 200 degrees Celsius. Then you chop up the chocolate and put it in a bowl in the fridge so that you can just toss it in the dough when it's time. By having it in the fridge, it does not melt as much on the hands when you mix it in :)

When this is done, open the yoghurt package, and measure the oatmeal in a container so that these two ingredients are also ready. In this way you can then use only one hand to mess everything up, and one to have in all the ingredients! What a thing!

Those were my tips and tricks, now comes the recipe! There will be about 36 pieces when I make them.

200 g room temperature margarine / butter
3 dl flour
4.5 dl brown sugar
¾ dl sugar
1 tsp baking powder
1 teaspoon vanilla sugar
1 tsp salt
6.5 dl oatmeal
200 g chocolate (I like dark baked chocolate in these)
1-1.5 dl Oatly yogurt vanilla flavor

  1. Switch on the oven
  2. Chop the chocolate (put in the fridge) Mix all the ingredients from butter to salt in the list to a homogeneous mixture
  3. Add the oatmeal and chocolate and mix homogeneously again
  4. Pour in the yoghurt until the dough just sticks together
  5. Roll balls of dough and place on a baking sheet (with baking paper if you want to avoid a lot of dishes)
  6. Press the balls a little and place in the oven for 7-8 minutes
  7. Remove the cookies with the parchment paper from the baking sheet so they can cool down a bit. Once they start to keep their shape, they can be placed on a wire rack
  8. Store in the refrigerator if not all are eaten at once

Some questions you may have about the recipe:

Why is there not even a whole dl of regular sugar in the dough?
Answer: I do not know, it is a recipe I found on the internet and changed a little. The sugar was allowed to remain as it was.

Does it work with cow yoghurt or does it have to be oat yoghurt?
Answer: I have never tried cow yogurt, but it can probably work. However, I would guess that oat yogurt is the best of the vegan options because there is already oats in the dough.
